Abstract Fat structural modifications promoted by phytosterol addition ( a hypocholesterolemic component ( to palm oil and a mixture of palm oil and canola oilwere evaluated in order to develop fats with reduced saturated fatty acids. Palm oil added with free or esterified phytosterols was investigated in terms of triacylglycerol composition, microstructure, solid fat content, and crystallization behavior before and after chemical interesterification. The addition of 10% of free phytosterols to samples before interesterification built up a denser crystal fat network structure. After interesterification, the free phytosterols lost their structuring ability and behaved as the esterified form. Free phytosterols were subsequently added to blends of palm oil and canola oil (50:50 w/w%) at different concentrations. Consistency measurements and microscopic observation confirmed that, at concentrations of 6, 8, and 10%, the free phytosterols upgraded the fat structure forming a strongly cohesivefat crystal network.

O chocolate ao leite é uma suspensão de partículas muito finas (até 25 µm) de cacau, sólidos do leite e açúcar, envolvidas por uma fase gordurosa composta de manteiga de cacau e gordura de leite. A gordura de leite é um complexo lipídico constituído por cerca de 400 diferentes ácidos graxos, formando assim uma imensa variedade de triacilgliceróis, que tendem a interagir com a manteiga de cacau. Este trabalho teve como objetivos avaliar e comparar as propriedades reológicas, o índice de brancura e a tensão de ruptura de chocolate ao leite padrão - formulado com gordura de leite anidra - e de chocolate ao leite produzido com estearina de gordura de leite. A estearina de gordura de leite foi obtida através do fracionamento térmico da gordura de leite anidra a 27ºC e alcançou uma maior proporção de triacilgliceróis de alto ponto de fusão. A viscosidade plástica e o limite de escoamento de Casson apresentaram diferenças expressivas entre os dois tipos de chocolates. Os chocolates produzidos foram armazenados durante 5 meses em duas estufas BOD, sendo uma mantida à temperatura constante de 20ºC e a outra submetida a ciclos de temperaturas (20ºC-32ºC, em intervalos de 24 horas). A avaliação da cor realizada nas amostras submetidas a ciclos de temperatura indicou um aumento do índice de brancura em ambos os tipos de chocolate, mas com menor intensidade nos chocolates produzidos com estearina, sinalizando que esta formulação é mais estável à formação de fat bloom. A tensão de ruptura dos dois tipos de chocolates nas duas condições de armazenamento permaneceu semelhante. Imagens captadas por microscopia eletrônica de varredura (MEV) mostraram que o fat bloom formado no chocolate ao leite apresenta estrutura cristalina mais uniforme do que a do chocolate sem fat bloom.

Milk chocolate is a suspension of very fine particles (up to 25 µm) of cocoa, milk solids and sugar, coated by a fatty phase composed of cocoa butter and milk fat. Milk fat is a complex lipid system composed of about 400 different fatty acids, forming a wide variety of triacylglycerols that tend to interact with the cocoa butter. The objective of this work was to evaluate and compare the rheological properties, whiteness index and snap of standard milk chocolates (formulated with anhydrous milk fat) and milk chocolate produced with milk fat stearin. Milk fat stearin was obtained by thermal fractionation of anhydrous milk fat at 27ºC, and attained a high proportion of triglycerides with a high melting point. Casson's plastic viscosity and yield stress showed expressive differences between the two types of chocolate. The chocolates produced were stored for 5 months in two BOD incubators, one maintained at a constant temperature (20ºC) and the other subjected to temperature cycling (20ºC-32ºC every 24 hours). The evaluation of the colour of the samples subjected to temperature cycles showed an increase in the whiteness index for both types of chocolate, although with lower intensity for the chocolates produced with stearin, signaling that this formulation is more stable to the formation of fat bloom. The snap of both types of chocolate stored under the two conditions remained similar. Scanning electron microscopy (SEM) images indicated that the fat bloom formed in milk chocolate has a more uniform crystal structure than the microstructure of fat bloom-free chocolates.

Os principais fatores que afetam a textura em um fondant são: formulação, relacionada com a existência de outros ingredientes além da sacarose; temperatura de cristalização; geometria do cristalizador, e velocidade de cristalização. Neste estudo, procurou-se avaliar a influência de parâmetros de processo sobre as características texturais e de atividade de água de um fondant produzido com xarope de glicose obtido pela hidrólise da fécula de mandioca, utilizando-se um protótipo de cristalização contínuo com capacidade para 1 a 2 kg.h-1. Este equipamento foi projetado e construído baseado em modelo de equipamento contínuo para a produção industrial de fondant, sendo configurado com um sistema de rosca sem fim, encamisada para circulação de água fria. Selecionaram-se, para seu dimensionamento, parâmetros, como tamanho da rosca (comprimento, diâmetro e passo) e espaçamento (gap) entre a rosca e o tubo externo; para permitir variações na velocidade de rotação da rosca, optou-se pela instalação de um inversor de frequência acoplado ao motor. Amostras de fondant foram produzidas a partir de misturas de sacarose e xarope de fécula de mandioca 42DE, estudando-se a influência das variáveis temperatura de cristalização e velocidade de rotação sobre sua textura, e a atividade de água, utilizando-se delineamento estatístico Composto Central Rotacional com base na Metodologia de Superfície de Resposta (MSR). Com o uso do protótipo dotado de rosca de 250 mm de comprimento e 27,2 mm de diâmetro, e considerando-se as repostas de atividade de água e textura, concluiu-se que para obter as melhores características no fondant, com textura adequada e maior estabilidade microbiológica, deve-se trabalhar com teores de xarope de glicose de, no mínimo, 20% (mínima atividade de água), velocidade de rotação entre 105 e 110 rpm, e temperatura inicial de cristalização ao redor de 60 °C.

The main factors affecting the texture of a fondant are its formulation, related to the presence of other ingredients besides sucrose, the crystallization temperature, beater design and beater speed. This investigation evaluated the influence of process parameters on the textural characteristics and water activity of fondants produced with glucose syrup obtained by hydrolyzing manioc starch. A small-scale prototype of an industrial beater with a capacity for 1 to 2 kg.h-1 was designed and tested. It consisted of a double jacketed cylinder containing a screw conveyor. The screw size (diameter, length and path), gap between the screw and the external tube and the range of screw rotation (a frequency inverter was coupled to the motor to allow for speed changes) were used as design criteria. Samples of fondant formulated with sucrose and 42DE manioc starch syrup were produced, and the influence of the crystallization temperature and rotation speed on the texture and water activity evaluated by a central composite design based on the fit to a second-order polynomial model, using response surface methodology. The results indicated that, considering the responses for water activity and texture, the use of the fondant beater equipped with a 250 mm length screw with a 27.2 mm diameter, allowed one to obtain an appropriate texture and microbiological stability using manioc starch syrup levels of at least 20% (minimum water activity), rotation speed between 105 and 110 rpm and an initial beating temperature of 60 °C.

The caffeine solubility in supercritical CO2 was studied by assessing the effects of pressure and temperature on the extraction of green coffee oil (GCO). The Peng-Robinson¹ equation of state was used to correlate the solubility of caffeine with a thermodynamic model and two mixing rules were evaluated: the classical mixing rule of van der Waals with two adjustable parameters (PR-VDW) and a density dependent one, proposed by Mohamed and Holder² with two (PR-MH, two parameters adjusted to the attractive term) and three (PR-MH3 two parameters adjusted to the attractive and one to the repulsive term) adjustable parameters. The best results were obtained with the mixing rule of Mohamed and Holder² with three parameters.

Fatias de manga dos cultivares Tommy Atkins, Haden e Keitt foram desidratadas à diferentes níveis de perda de água e congeladas em crescentes taxas de congelamento, exibindo um comportamento diferenciado. A variedade Keitt mostrou maior sensibilidade a pré-secagem e apresentou uma redução acentuada na quantidade de material exsudado. A utilização combinada das técnicas de pré-secagem e congelamento possibilitou a redução da exsudação. Este efeito foi sensível somente para valores de desidratação até 20% de perda de peso. A redução da quantidade de gelo formada durante o processo de congelamento foi quantificada.

Mango slices of Tommy Atkins, Haden and Keitt varieties were dehydrated at different levels of water loss, frozen at increasing freezing rates. They showed different behaviour. The Keitt variety showed greater sensibility to the pre-drying treatment and presented higher decrease on dripping loss. This effect, however, was sensible only when dehydration values were lower than 20% in weight loss. The reduction of the amount of ice formed during freezing process was quantified.

Foram determinadas as taxas de respiração e a perda de peso e composição gasosa no interior da embalagem, de mangas embaladas individualmente em filme de polietileno de baixa densidade com espessura de 24,5 μm, armazenadas a 7°C (80-90% UR); 12°C (75-85% UR); 17°C (70-80% UR); 22°C (65-75% UR) e 25°C (65-75% UR). A partir dos resultados experimentais e equações de transferência de massa foram calculadas a permeabilidade da casca da manga ao vapor de água e a concentração de gás carbônico do espaço livre, após ter sido atingido um estado estacionário de transferência de massa. A concentração de gás carbônico calculada foi comparada com a obtida experimentalmente, tendo sido encontradas diferenças, dependendo da temperatura, entre -16% e 29%. A permeabilidade calculada da casca foi cerca de 600 vezes maior que a do filme plástico.

Respiration and weight loss rate, and gaseous composition inside the packaging of mangos cv. Keitt individually sealed in a low-density polyethylene film, 24.5 _m thick, stored at 7°C (80-90% RH); 12°C (75-85% RH); 17°C (70-80% RH); 22°C (65-75% RH) e 25°C (65-75% RH) were determinated. After mass transfer had reached a steady state, mango peel permeability to water vapor and concentration of carbon dioxide inside the packaging were calculated using experimental results and mass transfer equations. Calculated peel permeability was 600 times greater than plastic film. Experimental and calculated carbon dioxide concentration were compared and, according temperature, were founded differences between -16% and 29%.
